Peach Cake Recipe

Ingredients
  • 1 tsp salt .
  • 1 c vegetable oil .
  • 3 c all-purpose flour .
  • 1 1/2 (15 oz) cans canned peaches, sliced, drained .
  • 1/4 c granulated sugar .
  • 1 (3 oz) box instant vanilla pudding .
  • 4 eggs .
  • For the cake .
  • 2 1/2 tsps vanilla extract .
  • For the topping .
  • 1 tbsp baking powder .
  • 1/4 c orange juice .
  • 2 tsps ground cinnamon .
  • 2 c granulated sugar .
  • 1 1/2 (15 oz) cans canned peaches, sliced, drained, sliced, mashed .
  • 1 (12 oz) container Cool Whip

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 In a large bowl, then add sugar & oil, beat eggs, mixing well.
  • Step #3 In another bowl, whisk together flour, salt & baking powder, before adding it to the egg mixture, ALTERNATELY with orange juice.
  • Step #4 Add vanilla extract, & mix well.
  • Step #5 In a separate bowl, toss sliced peaches with sugar & cinnamon.
  • Step #6 Pour 1/3 of the batter into the prepared tube pan, then layer 1/2 of the peach mixture over it.
  • Step #7 Cover up that peach layer with 1/3 of the batter & then the last 1/2 of the peach mixture.
  • Step #8 Follow that by layering the last 1/3 of the batter, covering the last peach layer completely.
  • Step #9 Put in oven & bake 1 hr.
  • Step #10 Cool cake 10 mins before turning out onto a wire rack.
  • Step #11 Cool completely.
  • Step #12 For the topping, pudding & Cool Whip, in a medium bowl, mix mashed peaches, & mix well.
  • Step #13 Spread this peach topping over the cooled cake.
  • Step #14 Refrigerate at least 1 hr before serving.
