Raspberry-nut Strudel Recipe

Ingredients
  • 3 c all-purpose flour .
  • 1 c flaked coconut .
  • 1 (12 oz) jar red raspberry preserves .
  • 1 c raisins .
  • 1 c firmly packed brown sugar .
  • powdered sugar .
  • 1 (8 oz) package cream cheese, softened .
  • 1 c finely sliced walnuts .
  • 1 c butter, softened

Directions
  • Step #1 Beat butter & cream cheese at medium speed with an electric mixer until creamy;stir in the flour.
  • Step #2 Divide dough into 4 equal parts.
  • Step #3 Wrap each in plastic wrap & chill at least 8 hrs.
  • Step #4 Sift powdered sugar lightly over work surface.
  • Step #5 Work with 1 portion on dough at a time.
  • Step #6 (Keep remaining portions in refrigerator).
  • Step #7 Roll dough into a 12-x8-inch rectangle.
  • Step #8 Combine raisins, walnuts, preserves, brown sugar & coconut; spread one-fourth of mixture over dough.
  • Step #9 Roll up jelly roll fashion, starting at short side.
  • Step #10 Pinch seam & ends together.
  • Step #11 Place roll, seam side down, on an ungreased baking sheet.
  • Step #12 Repeat process with remaining dough & filling.
  • Step #13 Bake at 325F for 55 mins.
  • Step #14 Serve warm or at about room temp Sprinkle top lightly with powdered sugar.
