Caramel Popcorn (light) Recipe

Ingredients
  • 1 1/2 tsps vanilla extract .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • 12 c popped popcorn (popped without salt or fat) .
  • 1/3 c butter .
  • 1 c packed dark brown sugar .
  • 1 tbsp light molasses .
  • 1/2 c light corn syrup .
  • cooking spray

Directions
  • Step #1 Preheat oven to 250°.
  • Step #2 Coat a large jelly roll pan with cooking spray.
  • Step #3 Combine sugar, butter, corn syrup, & molasses in a medium saucepan; bring to a boil over med-heat/flame.
  • Step #4 Cook 5 mins, stirring once.
  • Step #5 Remove from heat; stir in the vanilla, baking soda, & salt.
  • Step #6 Place popcorn In a large-ish bowl; pour sugar mixture over popcorn in a steady stream, stirring to coat.
  • Step #7 Spread popcorn mixture into prepared pan.
  • Step #8 Bake at 250° for 1 hr, stirring every 15 mins.
  • Step #9 Remove from oven; stir this to break up any large clumps.
  • Step #10 Cool 15 mins.
  • Step #11 Serve warm or at about room temp.
  • Step #12 Note: Store in an airtight container for up to 1 week.
