Ingredients
  • 1 c pineapple juice .
  • 1 c butter .
  • 2 c coconut .
  • 2 c sugar .
  • 1 tsp almond extract .
  • 1 1/2 c candied cherries .
  • 1 2/3 c flour .
  • 1 tsp salt .
  • FRUIT .
  • DRY INGREDIENTS .
  • 1 1/2 c light raisins .
  • 4 eggs .
  • 1 1/2 c slivered almonds .
  • LIQUID INGREDIENTS .
  • 1 tsp baking powder .
  • 1 1/2 c candied pineapple .
  • OTHER .
  • 1 c flour, mixed with fruit

Directions
  • Step #1 Cream together butter sugar & almond extract.
  • Step #2 Add eggs one at a time, beating well after each addition.
  • Step #3 Add remaining dry ingredients alternately with pineapple juice.
  • Step #4 Do 3 dry ingredients alternately with pineapple juice.
  • Step #5 Add floured fruit, mix well.
  • Step #6 Place batter in prepared pans.
  • Step #7 Pan can be a spring form pan, bundt pan or 2 loaf pans.
  • Step #8 Put a small pan filled with water in oven.
  • Step #9 Bake 275 for 2 hrs.
