Plum Pudding Recipe

Ingredients
  • 1 1/4 c whipped cream .
  • 1 egg white .
  • 2 tbsps sugar .
  • 1 lb green-skinned plums, halved & pitted

Directions
  • Step #1 Place the sugar & 2/3 c water in a heavy-bottomed saucepan.
  • Step #2 Bring to a boil, stirring to dissolve the sugar.
  • Step #3 Boil for 2 mins.
  • Step #4 Add the plums & let simmer for 3-8 mins, until tender but still holding their shape.
  • Step #5 Divide the plums & syrup in half & leave to cool.
  • Step #6 Puree half.
  • Step #7 Drain the remaining plums & place at the bottom of a serving dish.
  • Step #8 Fold the whipped cream into the puree.
  • Step #9 Beat the egg white & fold into the cream.
  • Step #10 Pour over sliced pistachio nuts & serve.
