Chickpea Curry Recipe

Ingredients
  • 2 inches piece gingerroot (grated) .
  • 1/4 tsp coriander powder .
  • 1 fresh tomato or 200 g canned tomatoes .
  • 1 garlic clove (crushed) .
  • 1/4 tsp red chili powder .
  • 400F g canned chick-peas (drained & rinsed) .
  • 1/4 tsp salt .
  • 1/4 tsp turmeric .
  • 1 tbsp oil .
  • 1 pinch garam masala .
  • 1/2 tsp cumin powder .
  • 1 onion (sliced)

Directions
  • Step #1 Heat a deep saucepan or a medium sized wok & add the oil or butter followed by the onions & garlic.
  • Step #2 Fry the mixture till the onions are caramelised.
  • Step #3 Then add the salt, coriander, cumin, turmeric & red chilli powders.
  • Step #4 Mix for a min & tip in the tomatoes.
  • Step #5 Cook the sauce until it begins to thicken.
  • Step #6 Add ¼ c of water & stir.
  • Step #7 Then tip in the chickpeas & mix.
  • Step #8 Mash a few of the chickpeas while mixing.
  • Step #9 Cover up & let simmer for 5 mins.
  • Step #10 Then add the ginger & the garam masala.
  • Step #11 Cook for another min & serve.
