Beetroot Dip Recipe

Ingredients
  • olive oil, for dressing .
  • 3 beetroots, bulbs .
  • 1 garlic clove .
  • 1 pinch salt .
  • 200 g creamy Greek yogurt

Directions
  • Step #1 Parboil the beetroot bulbs then bake them until soft.
  • Step #2 Peel & cut into quarters.
  • Step #3 Process in a food processor/blender or mixer until finely sliced.
  • Step #4 Grate the garlic into the yoghurt, add salt & mix well.
  • Step #5 Add to the beetroot & stir this to mix.
  • Step #6 Dizzle olive oil over top to finish.
