Eggs Benedict Recipe

Ingredients
  • 1 tbsp water .
  • 8 eggs .
  • 1/2 tsp cayenne pepper .
  • 4 English muffins .
  • For the sauce .
  • 1 tbsp single cream .
  • 125 g butter, softened .
  • 8 field mushrooms .
  • 25 g butter .
  • 2 tbsps olive oil .
  • 1 tbsp vinegar .
  • 1 pinch salt .
  • 1 tsp lemon juice .
  • 3 egg yolks

Directions
  • Step #1 Heat oven to 200°C.
  • Step #2 Remove stalks & wipe mushrooms.
  • Step #3 Place face down on a tray & drizzle with oil.
  • Step #4 Cover up with foil wrap & cook for 20 mins.
  • Step #5 Meanwhile, make the sauce.
  • Step #6 Beat together the eggs yolks & water in a bowl over boiling water or a double boiler until pale.
  • Step #7 Gradually add the butter & beat until the sauce thickens.
  • Step #8 Stir in the remaining ingredients & remove this from the heat.
  • Step #9 Poach the eggs until set but still runny.
  • Step #10 Toast the muffins.
  • Step #11 Assemble the piles as follows.
  • Step #12 Muffin - Mushroom - Egg - Sauce.
