Raspberry Oatmeal Bars Recipe

Ingredients
  • 1 1/4 c raspberry jam .
  • 1/4 c cranberry juice .
  • 2/3 c light brown sugar, packed .
  • 1/4 tsp baking soda .
  • 1/4 c vegetable oil .
  • 1 c flour .
  • 1/4 tsp salt (necessary) .
  • 1 c quick-cooking rolled oats

Directions
  • Step #1 Preheat oven to 325°F Lightly oil an 8x12 inch baking dish or coat it with nonstick cooking spray & set aside.
  • Step #2 Combine first 5 ingredients in a bowl with fingertips until no lumps of brown sugar remain.
  • Step #3 Drizzle oil & fruit juice over oats & mix in with fingertips until evenly moistened & crumbly.
  • Step #4 Set aside half for the topping.
  • Step #5 Press the remainder evenly in bottom of prepared baking dish.
  • Step #6 Spread raspberry preserves over top.
  • Step #7 Sprinkle top with reserved oat topping.
  • Step #8 Bake 30-40 mins, or until golden.
  • Step #9 Let cool in baking dish on a rack.
  • Step #10 Cut into bars & store at about room temp in an airtight container.
