Step #1 In the top of a double boiler set over simmering water scald 1/2 c of the milk.
Step #2 In a bowl whisk together the cornmeal & the cider, stir the mixture into the scalded milk, & cook the mixture, for 20 to 25 mins, stirring every once in awhile, or until it is thickened.
Step #3 (The mixture may appear slightly curdled.
Step #4 ) Remove the pan from the heat, the cinnamon, the salt, the butter, the brown sugar, & the raisins, whisk in the egg, & pour the mixture into a buttered 13-by 9-inch baking pan.
Step #5 Whisk in the remaining 1/2 c milk & bake the pudding in the middle of a preheated 325F.
Step #6 oven for 1 hr.
Step #7 Serve the pudding warm with the ice cream.
