Apple Nut Bread Recipe

Ingredients
  • 2 tb Granulated sugar; divided
  • Lengthwise; cored, & cut in 3/8"
  • 1 1/2 tb Unsalted butter
  • 1 Thick slices; then halved crosswise
  • 1/2 c Granulated sugar; plus
  • 1 c Sour cream
  • 3/4 ts Ground cinnamon
  • & 1/8" thick; thawed in refrigerat
  • Powdered sugar; for garnish
  • 1 1/2 ts Grated lemon zest; divided
  • 3 Tart apples such as Granny Smiths; peeled, halved
  • 1 Piece Frozen puff pastry about 9" square
  • 1 c Purchased caramel sauce; heated until warm
  • 6 Mint sprigs; for garnish
  • 1 3/4 ts Peeled minced fresh ginger; divide

Directions
  • Step #1 preheat your trusty oven to 400F degrees.
  • Step #2 Cut pastry sheet into 6 equal rectangles.
  • Step #3 Place rectangles 1 inch apart on ungreased baking sheet.
  • Step #4 Bake on rack in lower third of oven 15 to 20 mins, until puffed & golden.
  • Step #5 Remove; let cool for 10 mins.
  • Step #6 Slice pastries horizontally into 2 layers.
  • Step #7 (Pastries can be baked 2 hrs ahead.
  • Step #8 Leave uncovered at cool room temperature.
  • Step #9 ) In small nonreactive bowl, whisk together sour cream, 1/4 c sugar, 1 tsp ginger & 1 tsp lemon zest.
  • Step #10 (If not using as soon as possible, cover & put in the fridge up to 2 hrs.
  • Step #11 Bring to about room temp 30 mins before using.
  • Step #12 ) Heat butter in large, heavy skillet over med-heat/flame until hot.
  • Step #13 Add apple slices, remaining 1/4 c plus 2 tbsps sugar, remaining 3/4 tsp ginger, remaining 1/2 tsp lemon zest & cinnamon.
  • Step #14 Cook, stirring constantly, until apples are softened but not mushy, 3 to 4 mins.
  • Step #15 remove this from heat; leave in skillet at cool room temperature up to 2 hrs.
  • Step #16 When ready to serve, stirring, reheat apples, over medium heat.
  • Step #17 Spread about 2 1/2 tbsps sour cream mixture on base of each pastry.
  • Step #18 top this with layer of warmed apple slices, then with pastry lids.
  • Step #19 Place on 6 individual dessert plates.
  • Step #20 Dust each with powdered sugar, then drizzle generously with warm caramel sauce.
  • Step #21 Garnish each with mint sprig.
  • Step #22 Yields 6 servings.
