Step #1 Preheat the oven to 230 C, 450 F, Gas Mark 8.
Step #2 Sift the flour, salt & spice into a bowl.
Step #3 Rub in the fat until the mixture resembles fine bread crumbs.
Step #4 stir in the the apricots, walnut pieces & sugar, add the milk & mix to a soft dough.
Step #5 Knead carefully until smooth.
Step #6 Roll out the dough on a lightly floured surface to a 1 cm ( 1/2 inch) thickness & cut out 8-10 rounds with a 6cm (2 1/2 inch) biscuit cutter.
Step #7 Transfer to a greased baking tray, brush tops with milk & bake on the middle oven shelf of the preheated oven for 8-10 mins until well risen & golden brown.
