Basic Crepes Recipe

Ingredients
  • 1/2 c Milk
  • 2 tb Unsalted butter; melted and cooled
  • 1/2 ts Salt
  • 3 lg Eggs
  • 1 c All-purpose flour
  • 1/2 c Plus 2 tbsps water

Directions
  • Step #1 In a mixer of food processor/blender mix the flour, eggs, milk, 1/2 c plus 2 tbsps water, butter & salt for 5 seconds.
  • Step #2 Turn off motor, with a rubber spatula scrape down the sides of the container, & mix the batter for 20 seconds more.
  • Step #3 Transfer the batter to a bowl & let it stand, covered, for about an hr.
  • Step #4 The batter may be made 1 day in advance & kept covered & chilled.
  • Step #5 If necessary, add more milk by tbspfuls to batter to thin to consistency of heavy whipping cream.
  • Step #6 Heat 8inchdiameter nonstick skillet over mediumhigh heat.
  • Step #7 Brush with melted butter.
  • Step #8 Pour 3 tbsps batter into skillet & swirl to coat bottom evenly.
  • Step #9 cook this until top appears dry, loosening sides of crepe with spatula, about 45 seconds.
  • Step #10 Turn & cook this until brown spots appear on second side, about 30 seconds.
  • Step #11 Turn crepe out onto plate.
  • Step #12 Repeat with remaining batter, brushing skillet with butter & stacking crepes on plate.
  • Step #13 Yield: Makes enough batter for about 20 crepes.
