Basic Pesto Recipe

Ingredients
  • 1 c Tepid water; to 1 1/4 c
  • 2 c Semolina flour
  • 2 c All-purpose flour

Directions
  • Step #1 Place both types of flour in a large mixing bowl & stir this to mix well.
  • Step #2 Make a well in the center of the flour mixture & add water a little at a time, stirring with your hands until a dough is formed.
  • Step #3 You may need more or less water, depending on the humidity in your kitchen.
  • Step #4 Place the dough on a floured work surface & knead it like bread for 8 to 10 mins until smooth & elastic.
  • Step #5 Cover & let this stand for 10 mins at about room temp before using.
