Beetroot Soup Recipe

Ingredients
  • 1 bn Beetroot
  • Salt & freshly milled black pepper to taste
  • Lemon & Mustard Dressing;
  • 1 Heaped tsp sugar
  • 3 ts Vinegar;
  • Lamb's lettuce or baby lettuce leaves; washed
  • Tiny pinch nutmeg
  • 100 g Goat's cheese
  • 1/4 c Pecans or walnuts; sliced

Directions
  • Step #1 Wash beetroot, try not to damage skins.
  • Step #2 Cut away leaves, leaving 3 cm stem (this stops the beetroot bleeding).
  • Step #3 Place beetroot into a saucepan & cover with cold water.
  • Step #4 Bring to the boil, reduce heat then simmer until tender about 3/4 to 1 hr.
  • Step #5 When cooked, drain and cool under cold running water then slip away the skins.
  • Step #6 Slice beets & place this in a shallow bowl.
  • Step #7 Sprinkle top it over the sugar & vinegar then Spice up this with salt, freshly milled pepper & a tiny pinch nutmeg.
  • Step #8 Cover & chill until ready to serve.
  • Step #9 Arrange lettuce onto individual plates, then add beetroot & sliced goat's cheese.
  • Step #10 Drizzle over the dressing then Sprinkle top with nuts.
  • Step #11 Serve as soon as possible as a first course.
