Beetroot Terrine Recipe

Ingredients
  • 2 Oranges; juice of
  • 1 Spring onion; finely sliced
  • 6 tb Soured cream
  • 2 ts Orange zest; finely grated and dried in the oven
  • 3 tb Walnuts; crushed
  • ---CREAM------

Directions
  • Step #1 ----SOUP------- 1 Red onion; sliced 2 Carrots; sliced 1 lb Raw beetroot; sliced 25 g Butter 250 g Potatoes 1 1/4 l Vegetables stock 1/2 pt Orange juice Salt & pepper Soup: Melt the butter in the pan & sweat off the onion for 3-4 mins.
  • Step #2 Add the carrot, beetroot & potatoes & cook for 5 mins continually stirring.
  • Step #3 Add the stock, bring to the boil & let simmer for 35-40 mins until tender.
  • Step #4 Add the orange juice & check the Spice uping.
  • Step #5 Cream: Place the soured cream into a bowl & add the crushed walnuts & 1tsp of dried orange zest & finely sliced spring onions.
  • Step #6 Fold in the ingredients & place a good spoonful to the centre of each bowl.
  • Step #7 Dust with the dried orange zest.
  • Step #8 Spoon into warmed soup bowls & serve this with the orange & walnut cream.
