Berry Summer Pudding Recipe

Ingredients
  • 1/2 Batch Quickest Puff Pastry

Directions
  • Step #1 PASTRY CREAM--- 1 c Milk 3 tb Sugar 3 Egg yolks 2 tb All-purpose flour 1 ts Vanilla extract 1 tb Unsalted butter 3 c Raspberries; sliced -strawberries ; or a mixture of ; berries, up to ; 4 Confectioners' sugar for -finishing One jelly roll pan or cookie -sheet ; covered with parchment or -foil For the crust, such as ; raspberries, sliced ; strawberries, ; blueberries and ; blackberries, set a rack in the middle level of the oven & preheat the oven to 350 degrees.
  • Step #2 On a floured surface, lb the dough carefully to soften it & roll it into a rectangle about 7 inches wide & 12 to 15 inches long.
  • Step #3 Trim edges & arrange on baking pan.
  • Step #4 Cut two 1-inch strips from the length of the dough, leaving a 5-inch wide rectangle.
  • Step #5 Pierce the large rectangle well with a fork & wet the long ends with water, using a pastry brush.
  • Step #6 Apply the strips of dough to the moistened edges & press down well with fingertips to make the strips adhere to the base.
  • Step #7 Indent the sides of the strips with the back of a paring knife & pierce the narrow strips at 1/2-inch intervals with the point of a paring knife.
  • Step #8 Chill the tart crust for an hr.
  • Step #9 For the pastry cream, bring milk to a boil with half the sugar in a small saucepan.
  • Step #10 Whisk yolks in a bowl & whisk in remaining sugar & flour.
  • Step #11 Whisk the milk into the yolk mixture, then return mixture to the pan over the heat & whisk constantly until the custard boils & thickens.
  • Step #12 remove this from heat & whisk in vanilla & butter.
  • Step #13 Scrape the filling into a non-reactive bowl & press plastic wrap against the surface.
  • Step #14 put in the fridge until cold.
  • Step #15 To bake the tart crust, place it in the oven & bake for about 30 mins, until well risen & deep golden.
  • Step #16 Cool in the pan on a rack.
  • Step #17 To finish, spread the pastry cream in the cooled crust & scatter the berries over the pastry cream, covering it entirely.
  • Step #18 Dust with confectioners' sugar as soon as possible before serving.
