Blueberry-raspberry Cake Recipe

Ingredients
  • 1/2 c Granulated Sugar; divided
  • 3 tb Orange Juice
  • 1 ct Whipping Cream
  • 2 c Water; divided
  • 1 ds Salt
  • 1 pt Fresh Blueberries
  • 1 pk Orange Flavored Gelatin
  • 1 1/2 ts Grated Orange Rind
  • 1 Prepared 9-inch Pastry Pie Shell
  • 3 lg Eggs; separated

Directions
  • Step #1 Makes One 9-Inch Pie Separate the eggs.
  • Step #2 Slightly beat the egg yolks with the orange juice, & mix with 1 c water in a saucepan over a moderate heat setting.
  • Step #3 Add one-quarter c sugar & continue to cook & stir until the mixture is slightly thickened & just comes to a boil.
  • Step #4 remove this from the heat source.
  • Step #5 Add gelatin & stir until dissolved.
  • Step #6 Add water & orange rind, and stir.
  • Step #7 Chill until slightly thickened.
  • Step #8 Beat egg whites & salt until foamy.
  • Step #9 slowly beat in 1/4 c sugar & continue beating until stiff peaks are formed.
  • Step #10 Fold in thickened gelatin.
  • Step #11 mix well.
  • Step #12 Fold in one & one-half c blueberries and spoon filling into pie shell.
  • Step #13 Chill until firm.
  • Step #14 Just before serving, prepare the whipped cream.
  • Step #15 Cover pie with whipped topping & remaining blueberries.
  • Step #16 Slice to serve.
