Ingredients
  • 2 1/4 c Flour
  • 2 c Blueberries
  • 1 c Sugar
  • 2 ts Cinnamon
  • 1 Egg
  • 1 ts Vanilla
  • 1/4 ts Nutmeg
  • 1 ts Baking soda
  • 1 Stick Butter
  • 1 c Plain yogurt
  • 1/2 ts Grated lemon zest
  • === CRUMBLE TOPPING ===
  • 2 tb Butter; cubed & chilled
  • 1 1/2 c Brown sugar
  • === BLUEBERRY CAKE ===

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 Butter & flour a 9 x13-inch baking pan.
  • Step #3 Make topping: In a small bowl mix sugar & cinnamon.
  • Step #4 Using a fork, mix chilled butter bits into sugar mixture until it forms large crumbs.
  • Step #5 Make cake: In a standing electric mixer or with a hand mixer, cream together butter & sugar.
  • Step #6 Add egg & mix well.
  • Step #7 Add flour, baking soda, yogurt, vanilla & zest.
  • Step #8 Mix on medium for 4 mins.
  • Step #9 Pour batter into prepared pan & Sprinkle top top this with blueberries.
  • Step #10 Lightly press them into batter, if needed.
  • Step #11 top this with crumble topping.
  • Step #12 Bake for 45 mins.
  • Step #13 Cool on a rack & carefully unmold.
  • Step #14 This recipe yields one 9- by 13-inch cake.
