Ingredients
  • 12 oz Beetroot; cooked & peeled, not pickled
  • 1 sm Bunc chives
  • 1 ct Sour cream
  • 1 pt Beef stock
  • 8 oz Onion; peeled

Directions
  • Step #1 Heat the oil in a pan which will take all the ingredients & saute the sliced onion until transparent.
  • Step #2 Chop the beetroot roughly & add it & then the stock.
  • Step #3 Simmer for a few mins & then liquidise.
  • Step #4 serve this with a spoonful of sour cream on each bowl full & Sprinkle top with chives.
