Ingredients
12 Eggs
12 Flour tortillas; 10 inches warmed
1 pk frozen Southern-style hashbrowns
1 lg Onion; sliced
1 Green pepper; sliced
3 c Cheddar cheese; about 12oz, shredded
1/2 lb Bulk pork sausage; browned and drained
Salsa; optional
Directions
Step #1 In a large skillet, fry hash browns according to package directions; remove & set aside.
Step #2 In a large bowl, beat eggs; add onions and green pepper.
Step #3 pour this into the same skillet; cook & stir until eggs are set.
Step #4 remove this from heat.
Step #5 Add hash browns & sausage; mix carefully.
Step #6 Place about 3/4 c filling on each tortilla & top this with about 1/4 c cheese.
Step #7 Roll up & place on a greased baking sheet.
Step #8 bake this at 350 degrees F.
Step #9 for 15 to 20 mins or until heated through.
Step #10 serve this with salsa if desired.
Step #11 NOTES : This recipe stretched my budget!!.
