Broad Beans Recipe

Ingredients
  • 2 Pinches asafoetida;
  • 1 c Fresh shelled broad beans
  • 1/2 Tomato sliced
  • 1 tb Oil
  • 1/4 ts Turmeric powder
  • Salt to taste
  • 1 ts Red chilli powder
  • 1/2 ts Mustard & cumin seeds
  • 1 ts Sugar
  • 1 ts Coriander leaves sliced
  • 1/4 ts Garam masala
  • 1/2 c Fresh curds
  • Lemon juice to taste
  • 1/2 ts Ginger
  • 1/2 ts Dhania powder
  • 1 Stalk curry leaves

Directions
  • Step #1 Boil beans in water to which a pinch of soda bicarb is added, till cooked.
  • Step #2 Drain, hold under running water in colander, keep aside.
  • Step #3 Heat oil in a pan, add seeds, asafoetida, allow to splutter.
  • Step #4 Add chillies, curry leaves, ginger, tomato, stir fry 2 mins.
  • Step #5 Mix all dry masalas (including salt) in 1/2 c water to a paste.
  • Step #6 Add to pan, stir till oil separates.
  • Step #7 Add beaten curds, stir continuously, till gravy gets thick & oil separates.
  • Step #8 Add beans, sugar, stir.
  • Step #9 Simmer for 5-7 mins, till gravy becomes thick again.
  • Step #10 Add coriander, stir.
  • Step #11 Serve hot.
  • Step #12 Note: You may used the dehydrated lobia available in stores.
  • Step #13 Soak overnight, pressure cook, proceed as above.
  • Step #14 Also, instead of boiling, you may microwave for 3-4 mins, stirring once.
  • Step #15 Cook covered, after sprinkling some salt & water.
  • Step #16 Wash under running cold water and drain, before adding to masala.
  • Step #17 Making time: 20 mins (excluding boiling time) Makes: 3 servings Shelflife: Best fresh.
