Ingredients
  • 4 c Unsalted butter; room temperature
  • 1/3 c Dutch-process cocoa powder
  • 1 ts Pure vanilla extract
  • 3 c Confectioners' sugar
  • 7 1/2 c Bread flour

Directions
  • Step #1 TO MAKE BLACK & WHITE DOUGH: Place butter, vanilla, sugar, and flour in the bowl of an electric mixer fitted with the paddle attachment.
  • Step #2 Mix on medium speed until well-mixd.
  • Step #3 Transfer to a work surface.
  • Step #4 Divide the dough in half.
  • Step #5 Return one half to the mixer, & add cocoa powder.
  • Step #6 Mix until well-mixd.
  • Step #7 Wrap dough in plastic, put in the fridged, & store, until ready to use.
  • Step #8 TO ASSEMBLE THE COOKIES: Place 20 oz black dough between two 12- by 14-inch pieces of parchment.
  • Step #9 Roll out to a 7- by 12-inch rectangle, about 1/3-inch thick.
  • Step #10 Repeat with 20 oz white dough.
  • Step #11 Chill both rectangles at least 30 mins.
  • Step #12 Place 12 oz black dough between two 12- by 14-inch pieces of parchment.
  • Step #13 Roll out to a 4 3/4- by 12-inch rectangle.
  • Step #14 Repeat with 12 oz white dough.
  • Step #15 Chill at least 15 mins.
  • Step #16 Place 6 oz black dough on a clean work surface.
  • Step #17 Roll into a 12-inch-long log, about 3/4 inch in diameter.
  • Step #18 Repeat with 6 oz white dough.
  • Step #19 Wrap in parchment.
  • Step #20 Chill at least 15 mins.
  • Step #21 Remove top piece of parchment from the smaller black rectangle.
  • Step #22 Unwrap white log, & place lengthwise on black rectangle.
  • Step #23 Using bottom piece of parchment for support, wrap black dough around the white log, pressing with fingers to seal seam.
  • Step #24 Roll log back and forth to smooth seam.
  • Step #25 Repeat step with the black log & the smaller rectangle of white dough.
  • Step #26 Remove the top piece of parchment from the larger white rectangle.
  • Step #27 Place white log wrapped in black dough lengthwise on the white rectangle.
  • Step #28 Using bottom piece of parchment for support, wrap white dough around log, pressing with fingers to seal seam.
  • Step #29 Roll log back & forth to smooth seam.
  • Step #30 Repeat step with the black log wrapped in white dough & the larger rectangle of black dough.
  • Step #31 Wrap both logs in parchment.
  • Step #32 Chill 1 hr.
  • Step #33 Heat oven to 375 degrees.
  • Step #34 Line two baking sheets with parchment.
  • Step #35 Remove parchment from logs, & cut into 1/4-inch-thick rounds; place on sheets, spaced 2 inches apart.
  • Step #36 Bake cookies until barely golden, about 15 mins.
  • Step #37 Transfer cookies to a wire rack to cool.
  • Step #38 Bake or freeze remaining dough.
  • Step #39 store this in an airtight container up to 2 weeks.
  • Step #40 Makes about 7 1/2 dozen cookies.
