Butterscotch Bread Pudding Recipe

Ingredients
  • 3 c Water
  • 6 Northwest Bosc Pears
  • 1 c Sugar
  • 1 tb Lemon juice
  • 1/4 ts Salt
  • & evaporated milk or half-and-half
  • 1/4 c Light corn syrup; butter or margarine
  • 1 1/2 c Packed brown sugar

Directions
  • Step #1 Leaving stems intact, pare skin from pears & core from bottom.
  • Step #2 mix water, sugar & lemon juice in large saucepan.
  • Step #3 Bring to boil; then boil 5 mins.
  • Step #4 Add pears; cover & let simmer 12 to 15 mins or until tender, basting every once in awhile with syrup.
  • Step #5 Cool pears in syrup.
  • Step #6 mix remaining ingredients.
  • Step #7 Boil about 3 mins or until mixture reaches 220 degrees F.
  • Step #8 Cool at about room temp.
  • Step #9 Arrange poached pears in individual stemmed dishes.
  • Step #10 top this with sauce.
  • Step #11 Tip: For a lighter dessert, pears may be served in poaching syrup instead of butterscotch sauce.
  • Step #12 Always be sure to use ripe pears.
