Cabbage Salad Recipe

Ingredients
  • 2 oz Cotija cheese; crumbled
  • 1 md Onion; thinly sliced
  • === GARNISH ===
  • 1 lg Egg; beaten
  • 2 Garlic cloves; sliced
  • 1 ts Coarse salt
  • 2 Garlic cloves; minced
  • 2 tb Vegetable oil
  • 2 ts Ground cumin
  • === CABBAGE ROLLS ===
  • 2 c Canned plum tomatoes with their juices
  • 2 tb Vegetable oil
  • 1 ts Salt
  • 1 pn Sugar; or to taste
  • 2 ts Dried oregano
  • === RED SALSA ===
  • 1 md Onion; sliced
  • 1/2 ts Freshly-ground black pepper
  • 2/3 c Fresh bread crumbs
  • 1/2 lb Ground pork
  • 1 Green cabbage head
  • 1/2 lb Ground beef
  • 1 Jalapeno chile; stemmed, seeded, & thinly sliced

Directions
  • Step #1 Prepare salsa: Heat the oil in a saucepan over moderate heat.
  • Step #2 Add the onion & saute until soft, about 5 mins.
  • Step #3 Add the garlic, jalapeno & salt & saute for 1 min longer.
  • Step #4 Add the tomatoes with their juices & reduce the heat to low.
  • Step #5 Cook the tomatoes, until soft & juices have reduced by half, stirring every once in awhile, about 10 to 15 mins.
  • Step #6 Adjust Spice upings with salt, pepper & sugar to taste.
  • Step #7 Transfer the tomato mixture to a mixer & puree until smooth.
  • Step #8 Set aside.
  • Step #9 Prepare cabbage rolls: Bring a large pot of salted water to a boil.
  • Step #10 Core the cabbage & drop it into the boiling water.
  • Step #11 Boil the cabbage until the leaves loosen & come off easily, using tongs to separate the leaves.
  • Step #12 Immerse the leaves in cold water, then drain completely on paper towels.
  • Step #13 Heat the oil in a large saute pan over moderate heat.
  • Step #14 Add the onion & saute until soft, about 5 mins.
  • Step #15 Add the garlic, cumin & oregano, & saute 1 min longer.
  • Step #16 Remove from heat & let cool.
  • Step #17 In a bowl, egg, beef, mix the pork, cooled onion, bread crumbs, salt & pepper.
  • Step #18 Using your hands, mix well & divide into 12 portions.
  • Step #19 Preheat the oven to 350 degrees.
  • Step #20 Prepare the cabbage leaves by cutting out the tough part of the central stem from the lower part of each leaf.
  • Step #21 Spread each leaf with a portion of the filling & roll this into a cylinder, enclosing the filling completely.
  • Step #22 (You may need to overlap a few small leaves if you run out of big leaves.
  • Step #23 ) Place the stuffed cabbage rolls in a 9- by 13-inch baking dish, folded side down.
  • Step #24 Pour the salsa over the cabbage rolls & bake, covered, for 1 hr or until the cabbage is very tender.
  • Step #25 Transfer cabbage rolls to individual plates or a serving platter, Sprinkle top with the Cotija cheese & serve warm.
