Cauliflower Au Gratin Recipe

Ingredients
  • 1 sm Cauliflower
  • 1 Red onion; sliced
  • 100 ml Double cream
  • 1 Vanilla pod; split
  • 1 Vegetable stock cube
  • 1 Garlic clove; crushed

Directions
  • Step #1 1 Break the cauliflower into florets & cut in slices.
  • Step #2 Put into a medium pan & add the red onion, garlic & seeds from the vanilla pod.
  • Step #3 2 Crumble the stock cube in & pour enough boiling water over to cover.
  • Step #4 3 Bring to the boil & let simmer for 8-10 mins.
  • Step #5 Add the double cream.
  • Step #6 4 Pour the soup into a mixer & process until smooth.
  • Step #7 Serve as soon as possible with fresh crusty bread.
