Cheese Stuffed Shells Recipe

Ingredients
  • 3/4 c Bread crumbs
  • 2 c Cold rice
  • Oil for frying
  • 2 Eggs
  • 4 oz Mozzarella cheese - cubed

Directions
  • Step #1 Directions: Beat the eggs lightly with a fork in a bowl.
  • Step #2 Add the cold rice & stir carefully.
  • Step #3 Do not mash.
  • Step #4 Scoop 1 tsp of the rice and place a cube of mozzarella into the center.
  • Step #5 top this with another tsp of rice & press together.
  • Step #6 Drop the ball into a dish of bread crumbs.
  • Step #7 Cover the ball with the crumbs & place on a wax paper lined cookie sheet.
  • Step #8 put in the fridge for 30 mins or longer.
  • Step #9 Heat the oil in a deep pan or fryer to 375 degrees.
  • Step #10 Preheat the oven to 250 degrees.
  • Step #11 Fry the rice balls, 4-5 at a time, for five mins until golden brown.
  • Step #12 Drain on paper towels, then place this in the oven to keep warm for serving.
