Chestnut Stuffing Recipe

Ingredients
  • 1 c Cooked shelled chestnuts;
  • 1 c sliced onion
  • 1/8 ts Salt
  • 1/8 ts Pepper ; to taste
  • 1/2 Cu sliced carrots
  • 1/2 c 2% low-fat milk
  • 1/2 c sliced celery
  • 5 cn Low-salt chicken broth;
  • 1 c Potatoes; peeled & cubed
  • 1 tb Margarine
  • 1/4 ts Dried thyme
  • 1 1/4 c Plain croutons
  • Paprika

Directions
  • Step #1 Melt margarine in a large saucepan over med-heat/flame.
  • Step #2 Add onion; saute 4 mins.
  • Step #3 Add celery & carrot; saute 6 mins.
  • Step #4 Add potato and next 5 ingredients (potato through broth).
  • Step #5 Bring to a boil, reduce heat, & let simmer 40 mins.
  • Step #6 Place chestnut mixture in a mixer; process until smooth.
  • Step #7 Return to pan; stir in the milk.
  • Step #8 cook this until thoroughly heated.
  • Step #9 Ladle soup into individual bowls; top this with croutons, & Sprinkle top with paprika.
  • Step #10 Yield: 5 servings (serving size: 1 c soup & 1/4 c croutons).
