Ingredients
1 c Cooked shelled chestnuts;
1 c sliced onion
1/8 ts Salt
1/8 ts Pepper ; to taste
1/2 Cu sliced carrots
1/2 c 2% low-fat milk
1/2 c sliced celery
5 cn Low-salt chicken broth;
1 c Potatoes; peeled & cubed
1 tb Margarine
1/4 ts Dried thyme
1 1/4 c Plain croutons
Paprika
Directions
Step #1 Melt margarine in a large saucepan over med-heat/flame.
Step #2 Add onion; saute 4 mins.
Step #3 Add celery & carrot; saute 6 mins.
Step #4 Add potato and next 5 ingredients (potato through broth).
Step #5 Bring to a boil, reduce heat, & let simmer 40 mins.
Step #6 Place chestnut mixture in a mixer; process until smooth.
Step #7 Return to pan; stir in the milk.
Step #8 cook this until thoroughly heated.
Step #9 Ladle soup into individual bowls; top this with croutons, & Sprinkle top with paprika.
Step #10 Yield: 5 servings (serving size: 1 c soup & 1/4 c croutons).
