Chestnut Stuffing Recipe

Ingredients
  • 2 qt Stale focaccia; cut into 1-inch cubes
  • 4 oz Cider
  • 2 oz Oil
  • 1 c sliced carrots
  • 1 tb sliced fresh marjoram
  • 1 lb Roasted; peeled, & cleaned chestnuts cut into quarters
  • 1 c sliced celery
  • 1 c sliced onions
  • 2 oz Butter
  • 4 oz Chicken stock
  • 1 tb sliced fresh thyme
  • Salt & pepper; to taste

Directions
  • Step #1 preheat your trusty oven to 400F degrees.
  • Step #2 Add oil & butter to a hot casserole.
  • Step #3 Sweat carrots, onions, and celery & cook this until soft, but without color.
  • Step #4 remove this from heat and add marjoram & thyme.
  • Step #5 In a bowl mix focaccia, cider, hot stock, vegetables, & chestnuts.
  • Step #6 Spice up this with salt & pepper to taste.
  • Step #7 Mix well.
  • Step #8 place this in covered baking dish & bake for 30 mins.
  • Step #9 S: 8 servings.
