Ingredients
Whipped cream; optional
2 lg Egg whites
4 lg Egg yolks
6 1/2 oz Bittersweet or semisweet chocolate; sliced
3 tb Unsalted butter
1 pn Salt
Coffee Custard Sauce;
4 tb Sugar
Directions
Step #1 preheat your trusty oven to 425F.
Step #2 Butter four 3/4-c custard c.
Step #3 Dust with flour; shake out excess.
Step #4 mix chocolate, butter, & salt in top of double boiler set over simmering water.
Step #5 Stir until chocolate is melted & mixture is smooth.
Step #6 remove this from over water.
Step #7 Cool 10 mins.
Step #8 Beat egg yolks & 3 T sugar in large bowl, until thick and light, about 2 mins.
Step #9 Fold in chocolate mixture.
Step #10 Using electric mixer fitted with clean, dry beaters, beat egg whites & 1 T sugar in medium bowl, until stiff but not dry.
Step #11 carefully fold whites into chocolate mixture in 3 additions.
Step #12 Divide batter among prepared c.
Step #13 Place custard c on baking sheet.
Step #14 bake this until cakes are puffed but still soft in center, about 11 mins.
Step #15 Transfer baking sheet to rack.
Step #16 Cool cakes 1 min.
Step #17 Using small knife, cut around sides of cakes to loosen.
Step #18 Place plates on top of c.
Step #19 Invert onto plates; remove c.
Step #20 Spoon Coffee Custard Sauce around cakes.
Step #21 top this with whipped cream if desired.
Step #22 Coffee Custard Sauce 3 large egg yolks 1/4 c sugar 1 c whipping cream 1 tsp instant coffee powder 1 1/2 tsps coarsely ground espresso beans Beat egg yolks & sugar in a medium bowl until thick & light yellow; about 2 mins.
Step #23 Bring cream to simmer in heavy medium saucepan.
Step #24 slowly whisk hot cream into yolk mixture.
Step #25 Return mixture to same saucepan.
Step #26 Stir over medium-low heat until sauce thickens and leaves path on back of spoon when finger is drawn across, about 3 mins (do not boil).
Step #27 Strain mixture into clean medium bowl, Add coffee powder; stir until dissolved.
Step #28 stir in the ground espresso beans.
Step #29 put in the fridge until cold.
Step #30 , whisking every once in awhile, about 1 hr.
Step #31 (Sauce can be prepared 1 day ahead.
Step #32 Cover & keep put in the fridged.
Step #33 Per serving: 197 Calories; 14g Fat (65% calories from fat); 5g Protein; 13g Carbohydrate; 237mg Cholesterol; 69mg Sodium.
