Chocolate Raspberry Tart Recipe

Ingredients
  • 1 tb Cassis -; , or to taste
  • 5 tb Raspberry jam
  • 4 1/2 oz Fine-quality bittersweet chocolate; sliced fine
  • 1 oz Unsweetened chocolate; sliced fine
  • 1 c Heavy cream

Directions
  • Step #1 In a heavy saucepan bring the cream to a simmer with the jam, whisking, remove the pan from the heat, & add the chocolates & a pinch of salt.
  • Step #2 Let the mixture stand for 3 mins, whisk it until it is smooth, & whisk in the cassis.
  • Step #3 Strain the sauce through a fine sieve set over a bowl & serve it warm over ice cream.
  • Step #4 This sauce hardens into a chewy candy when poured over ice cream.
  • Step #5 This recipe yields about 1 1/2 c.
