Step #1 ---GLAZE------ 1 c Dutch cocoa 1 c Maple syrup 1/4 c Corn oil 1/4 c Vanilla soymilk 2 tb Pure vanilla extract Strawberry Coulis; see -recipe For the Cakes: preheat your trusty oven to 350 degrees.
Step #2 In a large bowl, baking powder, pastry flour, sift cocoa, baking soda, & sea salt.
Step #3 In a mixer, soy milk, tofu, mix maple syrup, corn oil, vanilla extract & orange juice.
Step #4 mix until the mixture achieves a smooth & even consistency.
Step #5 Add the wet ingredients to the sifted dry ones.
Step #6 Spoon the batter into oiled a floured star-shaped individual cake pans, filling them no more than 3/4 of the way full.
Step #7 Place about 10 chocolate chips in the center of the batter in the mold to form a "gooey" center.
Step #8 Bake the cakes for 15 to 18 mins.
Step #9 For the Glaze: Sift the cocoa.
Step #10 Whisk it together with maple syrup, corn oil & vanilla.
Step #11 On a low flame, stirring constantly, heat for 3 to 5 mins.
Step #12 put in the fridge until glaze cools.
