Chocolate-raspberry Bars Recipe

Ingredients
  • 2 1/2 c Vanilla Wafers; crushed
  • 1/3 c Coffee Liqueur
  • 1 c Almonds; lightly toasted and ground
  • 2 ts Ground Cinnamon
  • 3/4 c Sifted Confectioners' Sugar;
  • 6 oz Semi-Sweet Chocolate Chips
  • 1/2 c Pumpkin Puree

Directions
  • Step #1 Makes about 4 Dozen Truffles In a medium bowl, ground almonds, one-half c confectioner's sugar, mix vanilla wafer crumbs, & cinnamon.
  • Step #2 mix in chocolate chips, pumpkin puree, & coffee liqueur.
  • Step #3 (The one-third c of coffee liqueur may be replaced with a fifty-percent mixture of cold coffee & sugar syrup as a non-alcoholic alternative.
  • Step #4 ) Form the mixture into one-inch balls.
  • Step #5 Cover & put in the fridge to firm.
  • Step #6 Just prior to serving, dust the truffles with the remaining one-quarter c of confectioner's sugar.
