Chocolate-raspberry Cake Recipe

Ingredients
  • 1 ts Almond extract
  • 1 c sliced blanched almonds
  • 3/4 c Raspberry jam
  • 1 c Butter or margarine
  • 6 oz Semisweet chocolate morsels
  • 2 c Flour
  • 1 c Sifted powdered sugar
  • 1 lg Egg; slightly beaten
  • 1 c Sugar
  • 1 tb Milk

Directions
  • Step #1 mix flour & 1 c sugar in a bowl; cut in butter with pastry mixer until mixture is crumbly.
  • Step #2 Add egg & almond extract; stir well.
  • Step #3 Set aside 1 c of flour mixture for the topping.
  • Step #4 Press remaining flour mixture into a lightly greased 13"x 9" pan.
  • Step #5 Spread raspberry jam evenly over dough.
  • Step #6 mix reserved flour mixture, chocolate morsels & almonds; stir well.
  • Step #7 Sprinkle top topping over raspberry jam; carefully press topping into jam with a fork.
  • Step #8 bake this at 350 degrees for 40 mins or until lightly browned.
  • Step #9 Cool on wire rack.
  • Step #10 mix powdered sugar & milk in small bowl; stirring til mixture is smooth.
  • Step #11 Drizzle glaze over the toppings.
  • Step #12 Cut into bars.
  • Step #13 Sometimes I have skipped the topping all together & spread chocolate frosting over the mixture instead.
