Ingredients
85 g Butter; unsalted
1 tb Lemon juice
450 g Sweet pastry
25 g Dried figs; sliced
2 tb Double cream
2 ts Ground cinnamon
10 lg Granny Smith apples
Sugar
2 tb Calvados
1 ts Lemon zest
1 ts Orange zest
40 g Dried apricots; sliced
1 1/2 tb Crystallised sugar
1/2 ts Nutmeg; freshly grated
55 g Dried prunes; sliced
1 tb Brandy
1 Egg white
Directions
Step #1 First prepare the pastry.
Step #2 Divide into two parts, one a little larger than the other.
Step #3 On a lightly floured surface roll the smaller piece into a round approximately 1/4 inch slices.
Step #4 In a large frying pan melt the butter & brown until it has a slightly nutty aroma.
Step #5 Divide the apples in the pan & coat with butter.
Step #6 Sprinkle top in the sugar & over heat saute the apples until lightly caramelised and tender, turn often so that they cook evenly.
Step #7 Pour in half the Calvados & brandy & cook this until the alcohol burns off.
Step #8 Pour in the cream & stir thoroughly.
Step #9 Transfer & spread over a large baking tray to cool.
Step #10 Preheat the oven to 400F.
Step #11 Warm the remaining Calvados.
Step #12 mix the sliced prunes, apricots and figs in a bowl & pour the calvados over, allow to infuse.
Step #13 In a large bowl mix the cooled apples & fruit mixture.
Step #14 stir in the the lemon juice, cinnamon, lemon & orange zest & nutmeg.
Step #15 Spoon the filling into the prepared pie tin, arrange the pastry disc on the top, brush with egg white & Sprinkle top with crystallised sugar.
Step #16 Bake for 30 mins & then turn the oven down to 300F & bake for a further 20 mins.
Step #17 Cook on a wire rack.
Step #18 serve this with a brandy sauce or cinnamon ice cream.
