Cinnamon Cider Recipe

Ingredients
  • 1/2 ts Vanilla
  • 1/4 c Finely-sliced pecans; toasted & cooled
  • 4 tb Cocoa powder
  • 6 Egg whites; room temperature
  • 1 pn Cream of tartar
  • 1/8 ts Cinnamon
  • 1 c Granulated sugar

Directions
  • Step #1 Preheat the oven to 275 degrees.
  • Step #2 With an electric beater on low speed, whip the egg whites & vanilla until frothy.
  • Step #3 On a medium speed, add the cream of tartar & whip until they turn white and begin to stiffen.
  • Step #4 Slowly add the sugar, whipping constantly, until the whites are stiff & glossy.
  • Step #5 Sift the cocoa powder & cinnamon over the whites.
  • Step #6 carefully fold the cocoa & pecans into the egg whites.
  • Step #7 Drop heaping tbsps of the batter, several inches apart, on parchment-lined cookie sheets.
  • Step #8 Bake for 45 mins.
  • Step #9 Turn the oven off & leave the cookies in the oven for 20 to 25 mins with the door closed.
  • Step #10 Store the cooled meringues in an airtight container.
  • Step #11 This recipe yields about 6 dozen cookies.
