Citrus Crusted Cod Recipe

Ingredients
  • Double cream to serve
  • 25 g Butter; grated
  • 100 g Oatmeal
  • 2 Limes
  • 2 Oranges
  • 75 g Brown sugar
  • 1 dr Vanilla essence

Directions
  • Step #1 Preheat the oven to 220c/425f/Gas 7.
  • Step #2 1 Peel & slice the oranges & limes.
  • Step #3 Place the slices in a gratin dish with 25 g brown sugar.
  • Step #4 2 For the Crumble Topping: Mix the remaining 75g brown sugar in a bowl with the grated butter, vanilla essence & oatmeal.
  • Step #5 3 Sprinkle top this over the fruit.
  • Step #6 Bake in the oven for 10-12 mins until golden.
  • Step #7 serve this with double cream.
