Classic Salsa Recipe

Ingredients
  • 125 g Butter
  • 1 kg Loin of Pork;
  • Baby Turnips
  • 2 lg Potatoes
  • Carrots; Red Cabbage and Gravy to serve
  • 150 ml Cider
  • 75 g Sugar
  • 2 lg Apples

Directions
  • Step #1 1.
  • Step #2 Score the pork & salt it for at least 24 hrs.
  • Step #3 This will help it to crispen whilst cooking.
  • Step #4 2.
  • Step #5 Peel the potatoes & cut in half.
  • Step #6 place this into a thick bottomed oven proof pan with the butter & the cider.
  • Step #7 cook this until golden brown.
  • Step #8 3.
  • Step #9 Peel & core the apples & cut in half.
  • Step #10 Dip one side in the icing sugar.
  • Step #11 4.
  • Step #12 Caramelise in a hot non stick pan with a little oil.
  • Step #13 5.
  • Step #14 The pork should now be roasting away on a high shelf in the oven for 25 mins.
  • Step #15 6.
  • Step #16 After that turn the heat down to Gas Mark 5.
  • Step #17 7.
  • Step #18 To tell if the meat is cooked, insert a skewer into the thickest part of the pork.
  • Step #19 The juices that run out should be absolutely clear, without any trace of pinkness.
  • Step #20 8.
  • Step #21 Take the pork out of the oven & leave to rest for 15 mins.
  • Step #22 9.
  • Step #23 serve this with Spice upal vegetables & gravy.
