Corn Mexiquiche Recipe

Ingredients
  • 1 c Cornmeal
  • 1 qt Peanut or canola oil for frying
  • Salt & freshly ground pepper to taste
  • 1 Egg beaten lightly
  • 1 c Flour
  • 1 lb Catfish fillet; cut into four even pieces

Directions
  • Step #1 In a four quart pot heat the oil to 325F degrees Fahrenheit.
  • Step #2 Spice up both sides of the fish with salt & pepper.
  • Step #3 Dredge the fillets in the flour.
  • Step #4 Coat each piece evenly & shake off any excess flour.
  • Step #5 Dip the fillets into the egg & then dredge in the cornmeal.
  • Step #6 Fry the catfish in the oil for three mins.
  • Step #7 Do this in two batches.
  • Step #8 Drain the catfish on paper towels & serve while still hot on a pile of the pickled vegetables.
  • Step #9 Yield: Serves 4.
