Corn Salad With Beetroot Recipe

Ingredients
  • 2 cn Whole-kernel corn; drained
  • 1 sm Green bell pepper; finely sliced
  • 1/4 c Italian dressing
  • 1 sm Red bell pepper; finely sliced

Directions
  • Step #1 In a medium bowl, mix all the ingredients; mix well.
  • Step #2 Cover and chill for at least 1 hr before serving.
  • Step #3 NOTE: Sure, you can make this with fresh corn instead of canned.
  • Step #4 Just use leftover cooked corn or boil a few eaaars, then cool & strip off the kernels.
  • Step #5 You can also add almost any fresh garden vegetables you want - maybe some snap peas or sliced scallions or radishes.
