Cornbread Souffle Recipe

Ingredients
  • 1/2 c Each: red onion; yellow tomato, red tomato, radish, cucumber, yellow sweet pepper, roasted corn kernels
  • Salad greens
  • 1 Anaheim pepper - sliced
  • 1 tb Dijon mustard
  • 5 tb Olive oil
  • 1 tb Parsley
  • 1 tb Olive oil
  • 1 1/2 c Cornbread
  • 1 tb sliced chives
  • 2 tb Balsamic vinegar

Directions
  • Step #1 Directions: Cut cornbread into bite size pieces & toss with the 1 T.
  • Step #2 olive oil & parsley.
  • Step #3 Toast the cornbread on a cookie sheet for 10-15 mins at 350 degrees.
  • Step #4 In a large bowl, mix the vinegar and mustard.
  • Step #5 Add the 5 T.
  • Step #6 of olive oil & whisk together.
  • Step #7 Toss with the greens, vegetables & toasted cornbread just before serving.
  • Step #8 Spice up with salt & pepper to taste.
