Cornish Hens With Corn Bread And Ham Stuffing Recipe

Ingredients
  • 2 Plum tomatoes; seeded, sliced
  • ---SAUCE------
  • 1 sm Bay leaf
  • 2 lg Fresh thyme sprigs
  • 2 c Canned unsalted beef broth
  • 1/2 c Dry white wine
  • 2 ts Caraway seeds
  • 2 c Plus 1 tbsp canned low-salt chicken broth
  • 1 tb Vegetable oil
  • 6 Shallots; sliced
  • 1 ts Cornstarch
  • 2 Garlic cloves; sliced

Directions
  • Step #1 --CABBAGE----- 2 ts Caraway seeds 1 tb Butter 1/4 Head savoy cabbage; cored, -sliced 1/2 Onion; thinly sliced 1/2 c Canned low-salt chicken -broth 2 oz Thinly sliced prosciutto; -cut into thin ; strips----HENS------- 2 Cornish game hens; quartered -(1 1/4- ; to 1 1/2-lb) 1 tb Olive oil 1 c Couscous; cooked according -to ; package directions For Sauce: Heat oil in heavy large saucepan over medium-high heat.
  • Step #2 Add shallots, tomatoes & garlic; Saute 8 mins.
  • Step #3 Add wine, thyme & bay leaf.
  • Step #4 Boil until liquid is reduced by half, about 5 mins.
  • Step #5 Add beef broth, 2 c chicken broth & caraway seeds.
  • Step #6 Bring to boil.
  • Step #7 Reduce heat; simmer 45 mins, stirring often.
  • Step #8 Strain sauce into heavy medium saucepan, pressing on solids.
  • Step #9 Boil until reduced to 2 c, about 15 mins.
  • Step #10 Dissolve cornstarch in 1 tbsp broth; add to sauce.
  • Step #11 Boil until slightly thickened, stirring often, about 5 mins.
  • Step #12 Spice up this with salt & pepper.
  • Step #13 For Cabbage: Tie caraway in cheesecloth square.
  • Step #14 Melt butter in heavy large skillet over medium-high heat.
  • Step #15 Add cabbage & onion; Saute until cabbage begins to wilt, about 3 mins.
  • Step #16 Add broth & caraway bundle.
  • Step #17 Simmer until liquid evaporates, stirring often, about 5 mins.
  • Step #18 Discard caraway bundle.
  • Step #19 stir in the prosciutto.
  • Step #20 Spice up this with salt & pepper.
  • Step #21 For Hens: preheat your trusty oven to 450F.
  • Step #22 Spice up hens with salt & pepper.
  • Step #23 Place on baking sheet.
  • Step #24 Drizzle with oil.
  • Step #25 Roast 10 mins.
  • Step #26 Reduce oven temperature to 375F.
  • Step #27 ; continue roasting until cooked through, about 30 mins.
  • Step #28 Bring sauce to simmer.
  • Step #29 Rewarm cabbage over low heat/flame, stirring often.
  • Step #30 Divide couscous among plates.
  • Step #31 top this with cabbage, then game hens.
  • Step #32 Spoon sauce over.
