Cornish Mead Recipe

Ingredients
  • 1 c Shredded cheddar cheese;
  • 4 1/2 c Cooked wild rice
  • 1/4 ts Pepper
  • 1 c Finely sliced onion
  • 1 c All-purpose flour
  • Finely sliced parsley
  • 3 sl Bacon
  • 4 tb Shortening
  • 1/2 ts Paprika
  • 1/2 c sliced green pepper
  • 1 ts Salt
  • 1 cn Condensed cream of mushroom soup; undiluted
  • 3 Cornish game hens; halved
  • 2/3 c Milk

Directions
  • Step #1 In a saucepan, mix soup & milk.
  • Step #2 Cook over med-heat/flame until smooth; stir in the cheese.
  • Step #3 Meanwhile, in a skillet, fry bacon until crisp.
  • Step #4 Remove bacon; crumble & set aside.
  • Step #5 In drippings, saut?, onion & green pepper until tender.
  • Step #6 Add to soup mixture along with wild rice; mix well.
  • Step #7 pour this into a greased 15-in.
  • Step #8 x 10-in.
  • Step #9 x 2-in.
  • Step #10 baking dish; top this with bacon.
  • Step #11 mix flour, salt, paprika & pepper in a heavy plastic bag; place one or two hens at a time in bag and shake to coat well.
  • Step #12 In another skillet, melt shortening.
  • Step #13 Brown hens on all sides.
  • Step #14 Arrange on top of rice mixture.
  • Step #15 Bake, uncovered, at 350 for 45 mins or until meat is tender.
  • Step #16 Sprinkle top with parsley.
  • Step #17 Yield: 6 servings.
