Cornish Pasty Recipe

Ingredients
  • 1/3 c Cold water; to mix
  • 1 md Onion - ; finely sliced
  • 1 Egg; beaten
  • 12 oz Chuck steak; sliced
  • 3 1/2 c Plain flour
  • === FILLING ===
  • 1 lg Potato; finely sliced
  • 1 c Vegetable shortening or lard
  • 2 sm Carrots; finely sliced
  • === SHORTCRUST PASTRY ===
  • 1 pn Salt
  • Salt & pepper; to taste

Directions
  • Step #1 Measure flour, salt, & shortening into bowl.
  • Step #2 mix quickly until the consistency of fine bread crumbs.
  • Step #3 Add cold water & mix until dough all pulls together.
  • Step #4 Dough should be slightly stretchy rather than crumbly.
  • Step #5 Roll out dough between 1/8- & 1/4-inch thick.
  • Step #6 Cut into 6-inch circles.
  • Step #7 Dice chuck steak, Spice up this with salt & pepper.
  • Step #8 Add to pot of water & boil carefully.
  • Step #9 Chop the onions & carrots and add to the pot with the meat.
  • Step #10 Simmer about 15 mins or until almost tender.
  • Step #11 When the meat is almost tender, peel & dice the potato.
  • Step #12 Add to the meat & vegetable mixture, & let simmer for about 5 mins more.
  • Step #13 Drain meat & vegetable mixture.
  • Step #14 preheat your trusty oven to 400F degrees.
  • Step #15 Lay the pastie rounds on a flat surface.
  • Step #16 Brush the rim of each pastie round with beaten egg.
  • Step #17 Place an equal portion of the steak mixture on each round.
  • Step #18 Bring the sides up & pinch the edges together into a crest.
  • Step #19 Allow for a few air vents for steam to escape as the pasties cook.
  • Step #20 Put the pasties on a greased baking sheet & brush the outsides with the remaining egg wash.
  • Step #21 Bake for 20 mins at 400 degrees.
  • Step #22 Reduce the heat to 350 degrees, then bake for 40 mins longer.
  • Step #23 remove this from the oven.
  • Step #24 Serve warm.
