Cornish Under-roast Recipe

Ingredients
  • 1 1/2 lb Flour;
  • 4 oz Butter;
  • 1 oz Yeast;
  • 1/4 pt Warm water;
  • Jam
  • 1/4 pt Milk;
  • Cream
  • 1 oz Lard;
  • 1/2 ts Sugar

Directions
  • Step #1 Put the yeast, sugar & 1 tsp flour in a basin, pour on the warm water, mix well & leave in a warm place for 15 mins.
  • Step #2 Sieve the flour into a large basin & leave in a warm place.
  • Step #3 Heat the milk carefully, add the lard & butter, leave to melt.
  • Step #4 Make a well in the middle of the flour & slowly pour in the yeast water & the warmed milk, & butter & lard, mixing all into a soft dough.
  • Step #5 Leave in a warm place for 1 1/2 hrs to rise.
  • Step #6 Knead for 4 mins, roll out 1/2in (12mm) thick.
  • Step #7 Cut in pieces & form into small balls about the size & shape of a tangerine or small rissole.
  • Step #8 Bake in a moderate oven for 20 to 30 mins until golden brown.
  • Step #9 Serve cold, filled with Cornish clotted cream & jam, split in half, especially raspberry.
