Ingredients
  • 1 2/3 c Sugar 3/4 c Pureed Dates
  • 1 ts Salt 1/2 c sliced walnuts, optional
  • 2/3 c Nonfat milk 1 Egg white
  • 2 1/3 c Flour
  • 2 Eggs Powdered Sugar, optional
  • 1 1/4 ts Baking soda 1 ts Vanilla
  • 2 ts Vinegar 1 1/4 c Mashed very ripe bananas

Directions
  • Step #1 Mix nonfat milk & vinegar & let this stand until thickened.
  • Step #2 Sift together flour, sugar, baking powder, baking soda & salt into mixing bowl.
  • Step #3 stir this to mix.
  • Step #4 Lightly beat eggs & egg white.
  • Step #5 Add to flour mixture with bananas, soured milk, Pureed Dates, vanilla & nuts.
  • Step #6 Stir just until mixed.
  • Step #7 Pour into 12-c bundt pan sprayed with non-stick vegetable spray.
  • Step #8 bake this at 350 degrees F.
  • Step #9 45 to 55 mins or until cake tests done.
  • Step #10 Remove to wire rack to cool.
  • Step #11 If desired, Sprinkle top with powdered sugar & serve.
  • Step #12 Makes 16 servings.
