Ingredients
1 2/3 c Sugar 3/4 c Pureed Dates
1 ts Salt 1/2 c sliced walnuts, optional
2/3 c Nonfat milk 1 Egg white
2 1/3 c Flour
2 Eggs Powdered Sugar, optional
1 1/4 ts Baking soda 1 ts Vanilla
2 ts Vinegar 1 1/4 c Mashed very ripe bananas
Directions
Step #1 Mix nonfat milk & vinegar & let this stand until thickened.
Step #2 Sift together flour, sugar, baking powder, baking soda & salt into mixing bowl.
Step #3 stir this to mix.
Step #4 Lightly beat eggs & egg white.
Step #5 Add to flour mixture with bananas, soured milk, Pureed Dates, vanilla & nuts.
Step #6 Stir just until mixed.
Step #7 Pour into 12-c bundt pan sprayed with non-stick vegetable spray.
Step #8 bake this at 350 degrees F.
Step #9 45 to 55 mins or until cake tests done.
Step #10 Remove to wire rack to cool.
Step #11 If desired, Sprinkle top with powdered sugar & serve.
Step #12 Makes 16 servings.
Step #13 Note: In place of nonfat milk & vinegar, substitute 2/3 c buttermilk if desired.
