German Pancake Recipe

Ingredients
  • 1 1/2 c Warm water (110 to 115
  • 1 pk Active dry yeast 2 tb Honey
  • 1 tb Kosher salt 1 Egg white lightly beaten
  • 5 c Flour Degrees)

Directions
  • Step #1 In the bowl of an electric mixer, mix 1 c of the flour, the yeast and salt.
  • Step #2 Add the water & honey & beat until smooth.
  • Step #3 Add the remaining flour,1 c at a time, to make a soft dough.
  • Step #4 Turn the dough out onto a generously floured board & continue working on the flour until the dough is stiff enough to knead.
  • Step #5 Knead until smooth & elastic, 5 to 10 mins.
  • Step #6 Cover with a towel & let rise 15 mins.
  • Step #7 Divide the dough into 8 to 12 equal portions.
  • Step #8 Shape each portion into a flattened ball.
  • Step #9 With your forefinger, poke a hole in the center.
  • Step #10 Stretch & rotate the dough until the hole is 1 1/2 to 2 inches wide.
  • Step #11 Place the bagels on a well-floured board, cover with another towel, & let them rise for 20 mins.
  • Step #12 Preheat oven to 375 degrees.
  • Step #13 Fill a large shallow pan (a wok works well) with 3 inches of water.
  • Step #14 Bring the water to a boil, reduce the heat & let simmer.
  • Step #15 Add a few bagels at a time & let simmer for 5 mins (turning once or twice).
  • Step #16 Remove the bagels from the pan with a slotted spoon & drain on a towel.
  • Step #17 Place the bagels on well-oiled baking sheets, brush with egg white and Sprinkle top with topping of your choice.
  • Step #18 Bake for 30 mins, until well browned.
  • Step #19 Transfer to racks to cool.
  • Step #20 SUGGESTED TOPPINGS: Kosher salt, poppy, finely sliced onions or garlic, sesame or caraway seeds.
