Chocolate Biscotti Recipe

Ingredients
  • 5 eggs
  • 1/2 tsp salt
  • 1 c blanched slivered almonds
  • 2 c white sugar
  • 1 tsp baking soda
  • 2 1/2 c all-purpose flour
  • 3/4 c unsweetened cocoa powder
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat the oven to 350 degrees F (180 degrees C).
  • Step #2 In a large bowl, mix all the ingredients except the almonds; mix well with a spoon.
  • Step #3 Stir in the almonds until well mixed; the dough will be thick & sticky.
  • Step #4 Place half of the dough on a 10 x 15 inch rimmed cookie sheet that has been coated with nonstick baking spray.
  • Step #5 Form a slightly rounded 4 x 12 inch loaf that is about 3/4 inch thick.
  • Step #6 Repeat with the remaining dough on a second cookie sheet & bake for 30 mins.
  • Step #7 Remove from the oven & reduce the temperature to 325F degrees F (170 degrees C).
  • Step #8 Allow the loaves to cool for 20 to 25 mins, then cut into 1/2 inch thick slices.
  • Step #9 Lay the slices cut side down on the cookie sheets & bake for 15 more mins.
  • Step #10 Turn the cookies over & bake another 15 mins or until very crisp.
  • Step #11 Allow to cool, then store this in an airtight container.
  • Step #12 Will keep several weeks.
