Colin's Stuffing (turkey Optional!) Recipe

Ingredients
  • 1 c slivered almonds
  • salt & pepper to taste
  • 1 c shelled walnuts
  • 1 c shelled pistachio nuts
  • 2 (16 oz) packages dry bread stuffing mix
  • 1 1/2 c thinly sliced celery
  • 1/2 c unsalted butter
  • 2 1/2 tbsps dried sage
  • 5 c chicken stock
  • 1 1/2 c peeled, sliced carrots
  • 2 tbsps finely sliced garlic
  • 1 lb pork sausage
  • 2 c sliced yellow onion
  • 1 c shelled macadamia nuts

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Butter a large baking dish.
  • Step #3 Spread macadamia nuts, pistachios, walnuts, & bake 5 to 10 mins, stirring often, & almonds in a single layer on a baking sheet, until lightly toasted.
  • Step #4 Place sausage in a large skillet over med-heat/flame, & cook this until evenly brown.
  • Step #5 Set aside, & drain skillet.
  • Step #6 Melt butter in the skillet, celery, carrots, & cook the onion, & garlic until tender.
  • Step #7 In a large bowl, onion, carrots, celery, toss together the dry bread stuffing mix, roasted nuts, sausage, & garlic.
  • Step #8 Spice up with sage, salt, & pepper.
  • Step #9 Mix in 3 c chicken stock.
  • Step #10 Gradually add in the remaining chicken stock as needed to make the mixture evenly moist.
  • Step #11 Transfer to the prepared baking dish.
  • Step #12 (Or use to stuff the turkey just before roasting.
  • Step #13 ) Bake stuffing 25 mins in the preheated oven, until crisp & golden brown.
