Aleecha (mixed Vegetable Stew) Recipe

Ingredients
  • 1 lb Cabbage; coarsely sliced
  • 2 c Carrots; sliced thin
  • 1/2 c Onion; sliced
  • 1 ts Tumeric; ground
  • 1 tb Tomato paste
  • 3 tb Corn oil
  • 10 cl Garlic; sliced thin
  • 1 c Water
  • 1 ea Fresh hot green peppers halved, to 3 peppers
  • 1 lb Potatoes; cut like french fries
  • 1 ts Salt; to taste
  • 1 ts Queman; see note

Directions
  • Step #1 Aleecha is a mixed vegetable stew.
  • Step #2 Quemam contains an ingredient not found in the US.
  • Step #3 I'd substitute dry berebere.
  • Step #4 In dry pan over moderate low heat, garlic, stir fry onion, & carrots for 2 mins.
  • Step #5 Add 1/2c of the water & cook 5 mins longer.
  • Step #6 Add the oil and continue to simmer.
  • Step #7 Add the tumeric, chilies, & cabbage.
  • Step #8 Cover the pan & steam to reduce the bulk for 2 mins.
  • Step #9 Stir well & add the quemam, tomato paste, salt & the potatoes.
  • Step #10 Cover the pan & cook for 5 mins.
  • Step #11 Add the remaining water and simmer for 5 mins more to soften the potatoes & thicken the sauce somewhat.
  • Step #12 Serve at about room temp with Injeera.
